Recipe: Date Loaf

How good is date loaf! I’m a big fan and so are my kids. I wanted to whip one up the other day and as soon as it came out of the oven, we cracked it open with loads of butter and a hot cuppa (it was DEVOURED).

I now know if I want to use this recipe for lunchboxes, then I will need to double the batch (and purchase more loaf tins) so that I can bake multiple at a time.

One to eat right then and there – because you can’t resist the smell of a date loaf fresh out of the oven. One for afternoon tea – because hungry hippos. And a couple more to slice and individually freeze slices for lunchboxes.

I seem to be doubling all of my baking recipes of late – and Buddy Boy isn’t even eating solids yet. Don’t ask me what I am going to do when all the boys are at school and playing sport – I’ll need a second oven (let alone a second loaf tin).

Recipe: Date Loaf

  • 500g dates
  • 1 cup coconut sugar
  • 2 cups boiling water
  • 120g butter (salted or unsalted)
  • 3.5 cups self raising flour
  • 2 teaspoons vanilla bean paste
  • 2 teaspoons baking powder

Remove the pits from the dates and then pop the dates into a food processor and blitz until roughly chopped.

Add the dates into a large bowl with the butter, brown sugar and vanilla bean paste. Pour the boiling water over the top and mix until combined.

Sift in the baking powder and flour and mix until combined. Divide into two loaf pans and then bake for 30 minutes at 180 degrees or until a skewer comes out clean.
