Life: What’s in my kitchen

Goodness me, I can’t believe that it is October already. I mean, I know that this year has been moving at break neck speed but October hit me and I was not ready! October marks our youngest son’s first birthday and 12 months of pretty much single parenting with my husband being so involved in the businesses and working interstate for the majority of the time. 

I feel like we need to make some changes in our life. We need to be able to spend more time together. I want to be able to have weekends and holidays. I want help with the dinner, bath bed routine each night. I want to wake up next to my husband EVERY morning. So universe, I am open to change – and I’m actively going to seek it out and grab those opportunities with two hands.

In my October kitchen…

Cheese is back. No as much as before, but we will be incorporating a little cheese back into our diet here and there. I mean, vegan cheese was TERRIBLE! And it was greatly missed by the boys.  If you haven’t tried my baked tacos, then I highly recommend you check out the link.

In my October kitchen…

We are still slightly obsessed with Mayver’s Almond, Coconut & Cacao spread {it wasn’t just a pregnancy craving thing}. We love it on top of pancakes, waffles and porridge or in my No bake choc, cashew and coconut snack bars.

In my October kitchen…

We are still eating  A LOT of porridge, even with the change in the weather. I am also loving all of the recipes that I have found for using porridge leftovers like; these leftover porridge pancakes and muffins from In Search of Golden Pudding, Milkwood’s porridge bread, or even leftover porridge cake. Waste not, want not.

In my October kitchen…

We have more CAKE. I think I’ll whip up the Z man’s first birthday cake with traditional buttercream icing rather than the vegan icing I made for the Little Dude’s third birthday cake. Not saying that it wasn’t delicious, but I thought that the traditional buttercream icing was a little easier to work with.

In my October kitchen…

We have been powering through the hommus. It is a staple of our lunch boxes at the moment. The boys like to eat their hommus with cucumber, celery, carrot, red capscium or rice crackers. And best of all, if they don’t eat all of their lunch box at lunch time, they are more then welcome to eat it after an afternoon trip to the park…I hate seeing the contents of a lunch box be tipped into the bin.

In my October kitchen…

I am eating Proud & Punch’s Frozen Greek Style Yoghurt with Blood Orange and Mango after I started having withdrawals after all the delicious blood oranges from Redbelly Citrus were consumed in August/September.

In my October kitchen…

I’m working with Carnival Cruises on some spooktacular halloween content. Think pumpkin, pumpkin, pumpkin – because, I am sure that today’s children are getting enough chocolate/sugar/junk. Stay tuned for my first recipe of ‘pumpkin spiced pikelets’.

The first mangoes of the season have landed! And my boys are EXCITED! Mangoes, strawberries and finger bun to tie them over from second breakfast to lunch (Term 4 can’t come quick enough).
