Guest Post – Orange and Avocado Salad

I had a fan write to me and say that they enjoyed my blog and would be keen if I would include a post or two from them on my blog. I decided that this would be a good idea and they provided me with some great salad recipes for the summer season. Thanks so much Linda for your beautiful emails and I hope you enjoy her recipes. 
How to make Orange Avocado Salad

Today you are going to learn how to make some delicious orange avocado salad. I am going to make an easy, gorgeous, healthy orange avocado salad with lettuce, carrots, zucchini, red onions with delicious mild lemon-orange dressing.

Let’s begin with this yummy and healthy salad that everyone will enjoy!

1 butter lettuce
1 romaine heart
1 radicchio
1 bunch Italian parsley or cilantro, leaves
1 small red onion
4 Hass avocados, ripe
1 large carrot
2 baby zucchini
1 lb fresh fava bean in pods
4 Navel orange segments, reserve the juice for the dressing.

Start by removing the outer leaves from the salad, gently cut and wash the leaves in some cold water, make sure that you change the water until it is clear with no dirt left on the bottom of the bowl.

First, bring the salting water to a boil, meanwhile shell the beans from the parts. Fava beans have a lovely nutty flavor and creamy texture. They are one of the oldest plants under cultivation and they were eaten in ancient Greece and Rome. They are popular in Mediterranean cuisine.

Next, trim the zucchini and carrot and shave into very fine slices, cut the carrots into fine strips if you want, peel the red onion and shave it into very fine slices.

It is now time to wash and segment the oranges, use a sharp knife to cut along the body of the orange, cut between the membrane while you collect the membrane with your other thumb as you go. Drain the segments and squeeze all the juice from the membranes, then dice half of the segments.

Next choose a fine avocado and cut it into quarter slices, make sure that you take the flesh out by using a table spoon and cut them into small dices, this is quite important as you want them to blend really well with the rest of the ingredients.

Next, get the sliced avocados, oranges and chopped parsley and pour them into a rounded shape bowl.

Now pour the dressing into the salad ingredients, make sure to arrange all the ingredients around the avocado mixture. Place the sliced red onions into a circular shape around the dish, fresh fava beans and the orange segment left.

I’ve been reading a lot about self love of late. I feel like there is so much self sacrifice when you’re a mother, and yet I am starting to realise that I need to love myself first to be a better mum and partner.

So here is to starting with something small for me. These @byronbaycookies are the business!!

However, I still seem to feel that mum guilt. I mean, I think I need to do a little more than just follow @drsophiebrock (@smallbusinessgrowthclub has so many good things to say about Sophie)… am I doing enough? Are they happy? Am I creating good memories for them? Am I giving them good life skills and coping tactics? Am I creating enough one on one time with each of them?

I know I’m a people pleaser, a perfectionist (and some … scrap that… most people I know say I am also an over achiever). How do I flip my thinking to focus more on the positive and not be so critical of myself? As I don’t want to pass on this trait to my kids.

Again @delishdeliveries did the majority of the work in preparing the Bulgogi beef.

Boil the rice. Stir fry the beef. Toss some gem lettuce with black sesame seeds and sushi seasoning. Top it all off with kimchi.
