Recipe: Middle Eastern inspired pizza

The other night I felt like a pizza – but I didn’t have my tradditonal pizza ingredients at hand {think ham, pineapple, pepperoni, capsicum – heck I didn’t even have any grated cheese, and I normally always have that as it is one of Mr Moo’s favourite snacks}. So I decided to try something new and make a Middle Eastern inspired pizza.

I made my simple dough which you can find here and then I set about finding ingredients in my pantry that I could make into a pizza. Seeing as I didn’t even have any passata or tinned tomatoes I was wondering what I would make my pizza sauce out of and then I drew some inspiration from hommus and my handy ‘entertainer’s white bean dip’.
This pizza is incredibly tasty and toddler friendly {as what toddler doesn’t love pizza?}. It is simple to make and packed full of healthy ingredients which makes it way better then the pizza that you pick up from the local takeaway.
Once the dough was made {and left to rest}, I blitzed up the ‘sauce’, fried off some lamb mince with spices and then grated some havarti cheese. All that was left to do was assemble the pizza and then cook off in the oven. This would have been awesome cooked in a wooden fire oven, but alas it is still on my wish list!
MIDDLE EASTERN INSPIRED PIZZA
Simple Dough {recipe can be found here}
1 can of cannelloni beans
1 can of chickpeas
2 spring onions
1 tablespoon of tahini paste
1 tablespoon of tomato relish
1 tablespoon of chopped parsley
1 tablespoon of olive oil
500 grams of lamb mince
1 tablespoon of cumin
1 tablespoon of coriander
1 teaspoon of chili flakes
1 punnet of cherry tomatoes
100 grams of grated havarti
100 grams of crumbled fetta
extra olive oil
salt and pepper
Make the dough and allow to rest for 30 minutes.
Whilst the dough is rising, place the cannelloni beans, chickpeas, spring onions, tahini, tomato relish, parsley and oil in a food processor and blitz until a smooth paste.
Place the lamb mince in a frying pan and brown off with the cumin, coriander and chili flakes. Allow to cool slightly.
Lightly oil your oven dish before laying your dough flat on the bottom. Cover the dough with your paste and then top with the lamb mince, cherry tomatoes, havarti and fetta. Cook for 20 minutes in a 180 degree oven or until the pizza dough is crispy {or too your liking}.

When Mr Moo was a baby, I would go into New Acton to watch a movie at the Mums and Bubs session and you could get a slice of panettone and a coffee for $5... and it wasn’t even Christmas!

Crispy cos lettuce cups filled with BBQ’ed chicken strips, mango, avocado, radish, cucumber, spring onions, parsley, dill, lemon juice and olive oil.

And everyone gets to eat with their hands - so perfect for baby led weaning!

I’d also consume outside - but with all this smoke we’ve been trying to stay inside (and it’s driving everyone a little crazy 😜). Canberra definitely had more cool things to do inside (I guess cause of the extreme heat and the extreme cold)... hit me up with some good things to do inside in Sydney.
