Recipe: hidden veggie sausage rolls

Sometimes it gets to the point where you just don’t want to fight with your toddler about what they can eat for dinner. The following can not be served for dinner night after night; plain boiled rice, steamed cobs of corn, two or three cans of baked beans, cheese and biscuits. And I refuse to make multiple meals for the various members of my family {my kitchen will not become an al carte kitchen}.

Now I am pretty sure that sausage rolls are pretty toddler friendly {as in most toddlers I know will eat them up}. So I thought that I would share with you my toddler friendly hidden veggie sausage roll recipe – that will have your toddler getting their fair share of their five a day, without even knowing it!
Now I always start with a base of onion, carrot and celery, but you can basically add in any veggies that you have on hand! Now in this version I also added capsicum and sweet potato – I think you can hide these five veggies pretty easily { if you have a super sleuth toddler, you may want to start off without the capsicum}.
The other super sweet thing about this recipe is that once served with a side salad, it makes a perfectly yummy adult dinner too {so don’t go leaving just because you don’t have children}.
HIDDEN VEGGIE SAUSAGE ROLLS
2 brown onions
2 carrots
2 sticks of celery
1 medium sweet potato
1 red capsicum
1/2 a bunch of parsley
500 grams of chervapi
100 grams of sourdough breadcrumbs
2 eggs

5 sheets of puff pastry
1 tablespoon of sesame seeds
1 tablespoon of olive oil
salt and pepper

Blitz the onions, carrots, celery, sweet potato, capsicum and parsley in a food processor until finely diced. Heat the oil in a large frying pan and fry off the veggie mixture a little {for approximately 5 minutes}, before transferring to a bowl and allowing to cool.

Mix the veggie mixture to the chervapi, breadcrumbs and eggs. Season with salt and pepper and then mix until it is evenly combined.

Lay out your puff pastry and form a line of the filling along one edge. Roll the puff pastry over the filling, before transferring to a baking dish and topping with sesame seeds.

Bake for 40 minutes at 180 degrees or until cooked through and golden.
