I’m not too sure where all this cold weather came from {I know Canberra gets cold in April, Easter means jumpers and Anzac Day means the heaters turn on, but we were in the midst of such warm weather just days ago}. My fridge is still packed with salad ingredients so I needed a recipe to use them up – because it definitely isn’t salad weather anymore!
Recipe: Nasi Goreng
Nasi goreng, which translates as ‘fried rice’ in Indonesian and Malaysian, was originally created as a means to use up yesterday’s leftovers. But this is a great meal for fussy toddlers and lovers of rice {and for Mummy’s who want to add a few more veggies into their toddler’s meals}. If you don’t have leftover cooked rice, you can cook a cup of rice and refrigerate it overnight on a tray – this drys it out and makes it perfect for this dish.
This recipe is a simple midweek meal that can be whipped up using leftover rice {and you can incorporate any kind of veggie into this – think of this recipe as the basic nasi goreng… you can take it anywhere after you have mastered the basic version}.
I used 1 tablespoon of sambal oelek – which is an Indonesian chilli paste. This wasn’t very hot {so super toddler friendly}. If you are a fan of the spice I would definitely up the sambal oelek in this recipe – or you could serve it on the side for those who might like it.
NASI GORENG
3 cups of cooked white rice
1 tablespoon sesame oil
2 eggs
1 brown onion
4 green spring onions
2 cloves of garlic, grated
5cm piece of ginger, grated
2 cups of shredded wombok
1 cup bean sprouts
1 tablespoon sambal oelek
2 tablespoons kecap manis
1 cucumber
1 tomato
Lightly beat your egg and then cook in a shallow frying pan. Roll omelette into a cigar-shape and then thinly slice.
Heat the sesame oil and stir fry the brown onion, spring onions, garlic and ginger until the onions have softened. Add the wombok and sprouts, stir fry until tender.
Add the rice, omelette, samba and kecap manis. Stir fry until heated through. Serve with slices of cucumber and tomato.

So quick and easy – and filling for little tummies! I know some kids don’t like spicy and so this recipe isn’t very spicy, but my little ones like me to add more chilli into theirs.
