I’ve got some great Mexican recipes for you this Monday to add a little spice to your life during these winter months… Oh and all of these recipes have been toddler and husband approved!
I’ve got a couple of really good ‘one-pot-wonders’ and a couple of taco recipes for you today – because who doesn’t love the wonderful complexity of something that has been slow cooked and forked apart or the quickness of a taco with everyone being able to assemble their meal as they wish?
Mexican pulled chicken {with a blood orange salsa}
Spicy Chicken and Black bean tacos*
Mexican Pulled Pork {as a one-pot-wonder}
Veggo Tacos
SPICY CHICKEN AND BLACK BEAN TACOS
500 grams of chicken mince
2 teaspoons of olive oil
½ cup finely chopped onion
2 cloves garlic, crushed
1 teaspoon of ground cumin
½ cup finely chopped onion

1 teaspoon of ground cumin
1 teaspoon of ground coriander
½ teaspoon ground chipotle powder
½ teaspoon ground cayenne
2 cans of black beans, drained and rinsed
½ cup veggie stock
Juice of 1 lime
½ teaspoon ground chipotle powder
½ teaspoon ground cayenne
2 cans of black beans, drained and rinsed

Juice of 1 lime
12 corn tortillas
sour cream
sliced avocado
fresh coriander
Brown off your chicken mince in a little olive oil, with the onion, garlic, cumin, coriander, chipotle powder and cayenne. Add the black beans to the chicken mince with the veggie stock and the juice of a lime and allow to heat through.
Serve your spicy chicken mince with corn tortillas, sour cream, sliced avocado and fresh coriander.
