My tray bakes bring all the traffic to my blog {and I’m like, thanks for sharing BabyMac}! I actually couldn’t believe the amount of traffic that was actually sent my way the day Beth shared the image of this delicious chicken and leek tray bake on Instagram. But that’s what I love about Beth and the bigger bloggers, they are always willing to share their secrets and help smaller blogger grow.

I think that the majority of you love a good simple dinner – easy to prepare, with limited actual ‘cooking’ instructions and of course, minimal washing up {because let’s face it, who actually likes cleaning up after dinner?}.
I am a big fan of finding an excellent sausage to add to my tray bake, as it adds a whole heap of flavour without actually having to do anything. You can be inspired to create a tray bake using any flavoured sausage you might find at your local butcher {or even what goes on sale at Coles or Woolworths}.
Let the sausage inspire your flavour combinations – just like I did for this chicken and leek tray bake.
CHICKEN AND LEEK TRAY BAKE
1 packet of chicken and leek sausages {approximately 8 sausages}
3 medium potatoes
1/2 butternut pumpkin
1 leek
1 bunch of asparagus
2 tbsp of olive oil
salt
Cut up your potato and pumpkin into similar sized pieces and then toss in a drizzle of oil and sea salt. Lay in a baking tray, arrange 4 cm pieces of leek around the potato and pumpkin and then roast at 200 for 20 minutes.
Remove the tray from the oven and add in the asparagus and sausages and cook for a further 20 minutes at 180 degrees or until the sausages are cooked through.
