Recipe: Vegan mixed berry chia bowls

I am all about minimal mess in the morning – as I want to get out the door without having to give anyone a bath. I choose to give my youngest his ‘messy’ meal in the evening, as I know that I can put him straight into the bath. I love making these vegan mixed berry chia bowls, as they make a berry smoothie less messy!

If I can prepare a meal prior to the event – like these vegan mixed berry chia bowls – then that is even better.

We have been devouring punnets and punnets of fresh strawberries and blueberries of late (I might indulge in the odd punnet of raspberries when all the children have gone to bed – because they are still a little too pricey to be squished on the floor). Strawberries were a dollar a punnet at our local Supabarn!

But we also love the simplicity and price point of a bag of frozen berries or frozen cherries.

Vegan mixed berry chia bowls

VEGAN MIXED BERRY CHIA BOWLS

1 cup chia seeds
2 cups coconut water
1 cup coconut yoghurt
1 tablespoon organic maple syrup
1 teaspoon cinnamon
500 grams of frozen mixed berries

Place the frozen mixed berries, cinnamon, maple syrup, coconut water and coconut yoghurt into a food processor and blitz until smooth. Take the blades out of the food processor, add the chia seeds and mix. Pour into containers to set or into a tupperwear container. Refrigerate overnight.

You can enjoy the vegan mixed berry chia bowls as is, or you can choose to top them with more coconut yoghurt or fruit or granola – anything really.
