As the mother of four little boys, I am always on the look out for a QUICK dinner. I need to get our dinner options on the table as fast as possible (especially now that dinner can coincide with the witching hours/cluster feeding time).
I normally make my own dough – but recently I’ve found some pretty good pre-made pizza bases that can be on hand for when everything goes to hell in a hand basket at dinner time.
The topping for these tasty quick lamb pizzas are inspired by the lamb sausages that I got on special at the local supermarket. As a Mum of four growing boys, I am now on the look out for specials in the supermarket all the time!
Recipe: Quick lamb pizzas
- 2 pre-made pizza bases
- 250 grams of greek yoghurt
- 3 potatoes
- 250 grams of grated cheese
- 6 lamb sausages
- 250 grams of hommus
- 200 grams of rocket
Spread the greek yoghurt over the pizza bases and then top with slices of potato, grated cheese and the lamb sausage filling (removed from the skins).
Bake in a 180 degree oven for 20-25 minutes or until the potatoes are soft and the sausage is cooked through.
Top with hommus and rocket before serving.
