Life: In my kitchen

Oh man, sorry that I have been a little incommunicado – it hasn’t been from lack of trying! We have had the most terrible time with our internet. Lots of hours have been spent on the phone to Telstra, lots of hours have been spent waiting for Telstra – only for Telstra to be a no show. I’m sure that my phone data has one through the roof {aided by the fact that our FOXTEL box has also no been working at our new house}.

Nevertheless, we have loved our move to Sydney and not having internet and foxtel has given us the chance to take more time to get out and about and explore our new area {although, it may have meant purchasing a few too many gingerbread men at our local cafe to lure children away from the awesome park – my own children, that is}.

I have said goodbye to the wonderful farmers markets in Canberra and have fully embraced the wonderful foodies market in Ramsgate. Unlike the Canberra markets, you don’t have to be there at 6am to make sure that you don’t miss out on the good eggs. There is less market produce and more ‘cooked’ food, so it means that it is a great place to shop and then grab lunch – it is just something that I will have to get used it.

As you may or may not be aware, Celia from Fig Jam and Lime Cordial is no longer hosting ‘In My Kitchen’ and has handed the baton over to Maureen at The Orgasmic Chef. As scientists have postulated recently, that first came the chicken then came the egg, the foremost important reasons of what attract the cockroaches into your kitchen are the leftover food particles, here and there on the tables or wash area. I’m still getting used to the lighting in my new home and finding the right place and the right time to photograph things, so I apologise for the crappy photography this post.

In my July kitchen…

I was super disappointed when my local ‘Superbarn’ closed to make way for a Coles. All of the local brands that I used to pick up disappeared and we were back to big generic brands and I was sad. One of the awesome things about moving to Sydney, was that my local supermarket was a Superbarn once again.

So during my first shop, I picked up this yoghurt to try with some granola that my Aunt had gifted me as a housewarming present. Although I was not as impressed with the yoghurt that I buy in Canberra, I did love that I now have so many more options shopping at Superbarn.

In my July kitchen…

This granola from Irrewarra has been delicious – it was gifted to me by my Aunt when we moved into our new house and I have been enjoying it ever since. As you can also see, we can once again wonder around barefoot in the morning {as it isn’t minus six degrees – like in Canberra}.

I’ve been grateful for my Marley Spoon box delivery each week. I have continued to use the service after the move, as I have been ‘single parenting’ whilst the husband ties up loose ends in Canberra. I love that I don’t have to think about what I am going to cook for dinner or if I have all of the ingredients. This crispy Mongolian beef with rice and Asian greens was a big hit with the boys and I also really enjoyed it.

In my July kitchen…

I finally hit up the Ramsgate Foodie Markets and got to check out The Free Range Butcher. I’d been doing some facebook/instagram stalking whilst I had been living in Canberra and I was totally excited to check out their produce. I was impressed by the range and came away with quiet a few things, including this Shish Tawook butterflied chicken. The attendant advised that I should bake it and prepare it with a couscous salad – doesn’t that just sound delicious!

In my July kitchen…

I’ve played around with mince again. This was a delicious lamb mince that I turned into koftas. I seasoned this lamb mince with harissa, fetta, garlic, red onion, lemon zest, mint and dill. It was delicious and a hit with both adults and children.

I tried the local kombucha from the Ramsgate Foodie Markets. I tried the mint and the ginger version. I thought that the mint would be my favourite, but then they offered me a complementary warm ginger kombucha and I was sold. The attendant informed me that if you heated the kombucha to 40 degrees it still maintained all of its good bacteria. And it was serious good. I’ll be heading back to the markets tomorrow for a few more bottles.

We have been powering through these mini avocados. They are the perfect size for the little dude. He will knock one back at breakfast, lunch and dinner if you let him.

Oh I forgot to mention that our new house had an induction stove top {which we were told was electric before we moved in} which meant that I needed to purchase a new set of pans/pots before I could actually cook anything. Have you cooked on induction before? I love it!

Family meals for my tribe of 6
Poke bowl magic 🪄 The boys have been smashing Poke bowl magic 🪄 

The boys have been smashing these poke bowls - sushi rice topped with grated carrot, baby cucumbers, quick pickled red onion, edamame, salmon sashimi, mayo, teriyaki sauce, beneto flakes, seaweed, sesame seeds.

It was an emotional weekend losing out an a house (yet again) at auction and marking my pop’s one year anniversary since he passed away.

And then this beautiful man brings me home hump day flowers - I mean Wednesday ... but he might also get lucky 😉

I did my research, I didn’t want blandness.

So in with my feta and my cherry tomatoes I popped; oregano, sundried tomatoes (and the flavoured oil they came in), heirloom tomatoes, garlic, green olives and seasoning.

Baked at 180 for 20 minutes then mashed with a potato masher (obviously I removed the stalks 😝). Added fresh basil and 1/2 cup pasta water and cooked pasta. Toss and devour!

Rice noodles, carrot, cucumber, spring onion, snow peas and snow pea sprouts and chicken breast (sliced thinly and seasoned with garlic powder, white pepper and salt and wok fried in sesame oil) ... topped with this super simple satay sauce.

1 can of coconut cream
1/4 cup of peanut butter 
1 tbsp kecap manis 

Bring to a simmer and whisk until smooth. Allow to reduce my 1/4 and then add to the top of the satay bowls with fresh chili
