Recipe: duck salad

Beware of hot duck fat. Beware of hot duck fat mixed with brown sugar. Beware as it causes a toffee like substance that, if comes into contact with your face, will remove skin and leave you with scabs. And then your husband will tease you for a week until they disappear and he will be too preoccupied by the teasing to praise you for this salad.

Please don’t be scared by the forewarning – this salad really is delicious and I think that it wouldn’t have been an issue if I didn’t have a 9 month old who wanted to be entertained and therefore I wasn’t rushing.

This salad was light and tasty and perfect for summer. By adding the duck it becomes a little be fancy and will impress any dinner guest – but in the end it is really just salad. *high fives*
DUCK SALAD
2 duck breasts, skin on
2 tablespoons brown sugar
1 teaspoon chinese five spice
salt and pepper
1 bag of mixed lettuce
2 cucumbers
1 mango
3 spring onions
1 bunch of radishes
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
1 tablespoon olive oil
Mix together the brown sugar, five spice and a little salt and pepper to form a dry rub. Rub this onto the skin of the duck and then place skin side down into a very hot frying pan. Cook for 5 minutes and then flip the duck over and place in a preheated 200 degree oven for 10 minutes.
Wash the lettuce and arrange on a plate, top with slices of cucumber with the seeds removed, slices of mango, strips of spring onion and wedges of radish.
Remove the duck from the oven, cover with foil and allow to rest for 5 minutes before slicing.
Mix the simple dressing of rice wine vinegar, soy sauce and olive oil together and then drizzle over the salad and the duck before serving.

    Well u know I like a salad, I also love me some duck.
    Chintaria in Sydney used to make the yummiest Sass Duck. Was a rich soy coriander sauce on rice… Oh my I love food! & this salad.
    I haven’t created a duck salad for Simple Salad Series… Hmm may have to be inspired & change that. xx

      Its a really simple recipe Vicki – and super yummy. Duck can be so easy to cook at home – really it’s just nicer tasting chicken 😉
