I love to create a meal that can be enjoyed by both my sons and the adults in the household. With two little ones, I feel like I don’t have the time {or the energy} to; whip up two meals, feed little ones, bath little ones, get everyone ready for bedtime, wash up from two meals, run the steam mop over the meals area and then get ready for bed myself. Heck, I’m pooped just thinking about it!
These quick lentils are mighty tasty and full of all the veggies that your little ones need. They are soft so that your little ones can eat them, however they aren’t so mushy as you and your partner feel like you are eating baby food. I like my veggies to be able to retain their shape, so that little ones can use their fingers to pick up pieces of carrot {if they like to feed themselves, rather then letting you feed them with a spoon}.
I think the lentils go really well with some lightly seared lamb. I enjoy cooking/eating the boneless loin from Cleaver’s Organics or the lamb steaks from local producer ANDO Organics. Both these cuts just need a quick sear {approximately 2-3 minutes each side in a hot pan}. You can simply season with a little salt and pepper or mix it up with some fresh herbs, crush garlic, some chilli flakes or a squeeze of lemon.
QUICK LENTILS WITH LAMB
1 can of brown lentils
1 onion
3 small carrots
1/2 green capsicum
3 medium tomatoes
1/2 bag of baby spinach
2 cloves of garlic
1/2 bunch of thyme
1 lemon
approximately 400 grams of lamb
olive oil
salt and pepper
Chop up your onion, carrots, capsicum and tomatoes into similar sized cubes. Toss in a medium saucepan with a little olive oil, crushed garlic and thyme before placing on the heat and frying off for approximately 2-3 minutes.
Rinse your can of lentils and then add to the veggies with half a can of warm water and the baby spinach. Simmer for 20 minutes. Add the juice of a lemon to the lentils and season before serving.
Whilst the lentils are cooking, sear your lamb for approximately 2-3 minutes each side in a hot pan. Allow to rest for 5 minutes before slicing and serving on top of the lentils.

Yes, I think that sometimes there needs to be a few modifications – but it everyone gets the same thing, most people are going to prompt the other to eat it {or at least try it}. A good kind of peer pressure?

Sounds great. I have a major crush on #onefamilyonemeal. From a feeding perspective nothing helps ward off picky eating phases better than family meals where you eat the same thing. Love the sound of these lentils and I usually have all of the ingredients on hand. Yum! See you soon ?

I think the same thing 🙂 I actually think that the fussiest eating in our household is my husband! These lentils are quick and tasty and could easily be mashed or even whizzed smooth in a food processer for those who couldn’t do ‘lumps’ yet 🙂
