You know that I love a good taco recipe and so when I saw that Old El Paso was doing a pork and pineapple taco mix – I thought, ‘that’s an interesting flavour combo’. I don’t mind mixing a little fruit into my savoury recipes, especially when it comes to a taco – check out my recipe for prawn and peach tacos here {maybe I even might have a thing for meals with a little alliteration}. And so I came home with some pork tenderloin and a pineapple and thought that I would work on creating my own fresh recipe.
I’m not exactly sure what goes into the Old El Paso sachets, but I’m sure that it is more salt and sugar then we realise. I think that as long as you have some fresh garlic, cumin, coriander and dried basil you can get an awesome traditional Mexican flavour profile going on your own {and for much cheaper}.
Now, I would love to have a go at making my own tortillas {especially with the purple corn from Wyld Palate} – but with two little ones, I find we have a much happier meal time if they get fed on time, which means that I always go with store bought.
- 800 grams of pork tenderloin
- 6 cloves of garlic
- 50 ml of apple cider vinegar
- 2 tbsp of honey
- 1 tbsp of dried chilli
- 1 tbsp of paprika
- 1 tbsp of cumin
- 1 bunch of chopped fresh coriander
- 2 tbsp of olive oil
- 2 tsp of salt
- 2 tsp of ground black pepper
- 1 ripe pineapple, well skinned, sliced thin, diced
- 1 finely diced bird’s eye chili
- 3 green shallots
- 100 ml fresh lime juice
- ¼ cup orange juice
- 2 tbsp brown sugar
- 2 tbsp chipotle powder
- 1 pinch salt
- 4 cobs of corn
- 2 avocados
- 12 corn tortillas
- Place the pork in a large bowl. Add the garlic, apple cider vinegar, honey, dried chilli, paprika, cumin, half the coriander, olive oil, salt, black pepper and toss to coat. Cover with plastic wrap and place in the fridge for 30 minutes.
- Heat a barbecue or grill pan over medium-high heat. Place your tenderloin onto the grill and cook for 5-8 minutes each side or until cooked through. Allow the pork to rest for 10 minutes before thinly slicing. Whilst it is resting, toss a quarter of the chopped pineapple in the juices of the pork – cooking for a minute or two and then removing from the heat.
- Meanwhile, to make the pineapple salsa, combine the remaining pineapple, shallots, chilli and coriander. Whisk the lime juice, orange juice, brown sugar, chipotle powder {or dried chili flakes} and salt and pour over the salsa, tossing to coat.
- Serve the pork with with warm corn tortillas, steamed corn cobs, smashed avocado and pineapple salsa.

I love Ham and Pineapple pizza, I’ve got a recipe on the blog for a pumpkin and pineapple curry, in fact, I love pineapple anything!
