Recipe: Whole roasted cauliflower with yoghurt tahini dressing

Do you know what is a really simple, really delicious element that you can adapt easily to match the taste profile of almost any meal? A whole roasted cauliflower! It is a great option if you are vegetarian or even trying to cut down on meat each week. A whole roasted head of cauliflower is super filling {think cauliflower rice} – and the roasting of it just takes it to another level. Even if you think you don’t like cauliflower, I urge you to try it. It is a far cry from the over-boiled, white mush that may or may not have been covered in a white sauce.

One of my favourite accompaniments to my roasted head of cauliflower is a simple greek yoghurt dressing. Whilst your cauliflower is roasting combine some delicious greek yoghurt with a little tahini, capers, fresh herbs, lemon juice and a little seasoning and BAM – dinner is AMAZING.

Recipe: Whole roasted cauliflower with yoghurt tahini dressing
Recipe Type: dinner
Cuisine: Modern Australian
Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins
Serves: serves 6
Ingredients
  • 1 head of cauliflower
  • 1 tbsp of coconut oil
  • 1 tbsp of mustard seeds
  • 1 tbsp of caraway seeds
  • 1 tbsp of salt
  • 1 cup of greek yoghurt
  • 1 tbsp of tahini
  • 1 tbsp of capers
  • 1 lemon
  • 1/2 bunch of parsley
  • salt and pepper
Instructions
  1. Preheat the oven to 180.
  2. Cut the stalk out of the middle of the cauliflower {or at least remove the majority of the green leaves from the base} and place on a baking dish. Drizzle with coconut oil and then sprinkle over the mustard seeds, caraway seeds and salt.
  3. Pop into the oven and roast for 30-40 minutes.
  4. Whilst the cauiflower is roasting, mix together the yoghurt, tahini, chopped capers, lemon juice and chopped parsley. Season with salt and pepper and serve along side the cauliflower.

    Oh I’ve seen roasted whole cauliflower on pinterest and a few of the vegan sites, I’ve even cauli & cabbage steaks which is fairly interesting.
    I always wondered how it would taste, so really glad you share this one.

    I have been meaning to try roasted cauliflower – sounds so much tastier than boiled or steamed varieties!

      I haven’t tried cauliflower rice. Can you believe that? I actually picked up a head of cauliflower at the farmer’s market this morning to do cauliflower rice this week.
