Recipe: Zucchini and fetta fritters

We love a zucchini fritter – I feel like you can serve them up for breakfast, lunch or dinner with a little tweeking. Think about serving them with a poached egg and a little crispy bacon for breakfast, as is for lunch and maybe add a simple salad for a super quick and healthy dinner option.

When we were away on holidays with some friends, I brought the ingredients to whip up these zucchini and fetta fritters for brunch one day.

Expect when I was whisking up the batter, I completely forgot to add the fetta into the mixture. I love the addition of fetta, so decided to mix it into the youghurt dressing {and you know what, it works well too}.

Veggies ready for my Zucchini and Fetta fritters by GoodFoodWeek

ZUCCHINI AND FETTA FRITTERS

4 large zucchinis
2 small carrots
3 spring onions
3 cloves of garlic
1/2 bunch of parsley
1/2 bunch of dill
300 grams of fetta
2 medium eggs
1/4 – 1/2 cup of flour {depending on how wet your mixture is}.
Olive oil

Grate the zucchini and carrots into a large bowl. Mix with the chopped spring onions, garlic, parsley and dill. Whisk together the fetta and eggs, before adding into the mixture. Add the flour slowly, until the mixture comes together.

Heat a large pan with a little oil. Drop 1/4 cup scoops of zucchini and fetta mixture into the pan. Cook for 2-3 minutes or until brown and then flip. Cook the patties until cooked through and repeat with the remaining mixture.

HERBY YOGHURT DRESSING

250 grams of greek yoghurt
1/2 bunch of parsley
1/2 bunch of dill
1 tbsp of tahini
1 lemon
1 tbsp of olive oil
sea salt

Simply mix the chop herbs, tahini, lemon juice, oil and salt into the greek yoghurt and you’re done. Serve along side the zucchini fritters.

      I really feel like the fetta is a game changer. A great way to get a couple of servings of veggies into everyone {not that I have many issues with my boys eating veggies – their favourite snacks are avocados or slices of red capsicum}.

    These are definitely going to be made at our house very soon. Love a zucchini fritter. We do the one family meal – my kids are a bit older now but I started it very young at least using the same ingredients in everyones meal even if some were pureed!     Yum! We’re huge fan of fritters in this house and that dressing sounds delicious… Everything is better with tahini!

      Thanks Kristy – they are pretty delicious! I find that the little ones are more likely to give something a try if all of the adults are also eating it.
