Recipe: Ling, white bean and kale soup

Sometimes I get over creating recipes for everyone else in the household. Sometimes I just want to cook something that I am craving. Sometimes I hit the jackpot and a recipe that I have created for me, it actually also approved my the little ones in the household. The other night, I created this ling, white bean and kale soup to try and pep me up a bit. It had been another tough week of parenting without the husband here. Not to mention the fact that it is school holidays – and even though I don’t actually have school aged children, I find going out during the school holidays a little overwhelming.

One of the upsides of school holidays, was that during school holidays the numbers that attend creche at the gym actually drop {instead of rising like in Canberra}. And although I am the youngest person in the aqua class by almost 40 years, there was only two of us in the class to start on Thursday. I guess a lot of grandparents were on babysitting duty during the school holidays.

GoodFoodWeek's ling, white bean and kale soup

LING, WHITE BEAN AND KALE SOUP

1 red onion
1/2 a bunch of celery
2 large carrots
1 bunch of kale
1 can of white beans
400 grams of ling
1 tbsp of fennel seeds
2 cups of veggie stock
1 tbsp of olive oil
salt and pepper

Heat the olive oil in a large saucepan over medium heat. Add the diced onion, carrot, celery and fennel seeds and toss until softened but not colouring {approximately 5 minutes}.

Add the white beans and veggie stock and bring to the boil. Reduce the temp, so that the pot is simmering, and add the ripped kale and 2cm chunks of ling. Simmer for 8 minutes or until the fish is cooked through.

Serve with crusty bread.

Now, my boys {aged three and 22 months} don’t like to eat the soup together. They much rather drink the broth and eat the carrot, white beans, ling and kale separately. This might be the key to getting your little ones to try eating this kind of soup?

    I never thought of making soup with fish but this sounds soup-er tasty! See what I did there?!

      You can make soup with ANYTHING. You probably don’t want to boil the heck out of any seafood, but quickly poaching it makes it the business.

    It is FREEZING here today and so this soup sounds absolutely perfect. Love the combination of the beans and kale.
