How good is salad weather? I love it! Long nights, slow nights, fire up the BBQ and whip up a salad for dinner – Daddy can cook the meat. This is a delicious recipe for asparagus, green beans and corn salad – with handfuls of mint that mean it go really well with lamb steaks {or lamb in general}.
Did she just say ‘lamb steak’? Yep! I sure did.
I know many people appreciate a good lamb cutlet or a lamb chop, but I think that the delicious lamb steak is often completely forgotten about.
Lamb steaks are an extremely versatile, and are easily adaptable for all types of recipes. The lovely people at Lamb and Beef reckon they can’t be beaten for taste and tenderness too! You can buy a few different lamb cuts as lamb steaks. Lamb topside steaks are ideal for stir-fries, while lamb rump and round steaks are perfect barbecuing and pan-frying.
You’ll find that Australian asparagus are so tender and delicious right now – I mean who doesn’t love a little seasonal veggies. Not only are the veggies at their best, but they are also at their best price point. This salad of asparagus, green beans and corn makes the most of the seasonal produce available.
ASPARAGUS, GREAN BEANS AND CORN SALAD
1 bunch of asparagus
1 bunch of green beans
1 cob of corn
1/2 bag of rocket
1/2 bunch of mint
1 lemon
3 tbsps of greek yoghurt
2-3 cloves of garlic
1 tbsp of olive oil
1 tbsp of sesame seeds
salt and pepper
Pop the green beans, corn and garlic into a pot of salted boiling water until tender. Drain and refresh in cold water.
Toss the asparagus onto the BBQ and char slightly.
Mash the softened garlic with a fork before mixing through the greek yoghurt with the juice of the lemon, olive oil and seasoning.
Toss the green beans, corn cobs, asparagus, rocket and torn mint in the yoghurt dressing and then top with sesame seeds before serving.
