Recipe: Carrot cake overnight oats

Mr Moo loves carrots and so we often try to incorporate them into other meals to make sure that he will give them a go. And what is better then your child eating veggies for breakfast? This awesome carrot cake overnight oats recipe combines carrots with the sweetness of the golden sultanas, vanilla bean paste and coconut milk, the spiciness from the cinnamon, nutmeg and ginger and all the benefits of eating oats for breakfast. 

What better way to gain the strength and energy to carry you through a hectic morning schedule than with a bowl of carrot cake overnight oats? Oats are harvested in the fall but are available throughout the year and can add extra nutrition to a variety of healthy dishes.

Oats, via their high fiber content, are already known to help remove cholesterol from the digestive system that would otherwise end up in the bloodstream. Now, the latest research suggests they may have another cardio-protective mechanism.

Studies also show that beta-glucan has beneficial effects in diabetes as well. Type 2 diabetes patients given foods high in this type of oat fiber or given oatmeal or oat bran rich foods experienced much lower rises in blood sugar compared to those who were given white rice or bread. CARROT CAKE OVERNIGHT OATS

1 cup of gluten free oats
1 can of coconut milk
1/2 cup of chia seeds
1/2 cup of golden sultanas
2 carrots
1 tbsp of vanilla bean paste
1 tsp of ground ginger
1 tsp of cinnamon
1 tsp of nutmeg

Finely grate your carrots using a microplane and then mix together all of the ingredients in a large bowl. Cover with gladwrap and refrigerate overnight.

To serve, you might like to top your carrot cake overnight oats with coconut yoghurt, toasted buckwheat, golden sultanas, toasted  pecans and a drizzle of maple syrup.
