The other day, as I walked through the Ramsgate Foodies Markets, I stopped as I always do at the Free Range Butcher {please note, these posts aren’t sponsored. I believe in supporting local businesses and I believe if they do a good job, then we as their local community should support them}. I picked up a packet of their delicious chorizo sausages and another shopper leaned over and asked ‘are they any good?’. I replied ‘I wouldn’t be buying them if they weren’t great!’.
You don’t have to do much when you have such beautiful produce to begin with and hence, these super simple chorizo ‘tarts’ made with puff pastry and other simple, yet delicious ingredients that I picked up at the markets that weekend.
CHORIZO ‘TARTS’
3 sheets of frozen puff pastry
3 chorizo sausages
1 punnet of cherry tomatoes
100 grams of mozzarella
100 grams of kalamata olives
basil leaves
Preheat the oven to 180 degrees and line a baking dish with baking paper.
Blitz the chorizo sausages into a rough crumb.
Cut out 3 disc shapes out of each piece of puff pastry. Top with grated mozzarella, chorizo, halved tomatoes, kalamata olives and torn basil leaves. Try to leave a small ring of pastry uncovered around the outside – this is what will puff up to give the appearance of a tart.
Bake in the oven for 15-20 minutes or until the puff is golden and has risen.
