I love following different people on Instagram, some of my favourites include; Every Night of The Week, Ruth Bruten, Melissa Got Style, Cherie_Clonan, Georgie Watts, and Amy Gerard.
When I stumbled across Amy. I was like damn, I feel like I should know you. So many people appeared in her feed that I know too. I mean, we both grew up in the Shire – so it stands to say that the normal six degrees of separation is probably cut down to two… but it surprised me that we don’t crossed paths growing up.
She is friends with people I went to school with or played netball with. I umpired her sister inlaws netball team for years (granted that was when they were in primary/early high school). I recognise the streets she grew up in, with friends in those very same streets. Surely she was up on the podium at Carmen’s at some point in time?? It feels weird to know so much and yet not really know that person. Has this ever happened to you?
Anyways, I feel like if we met in person we would get along (and my friends would be glad that I had someone else on the d-floor to grind to Ginuwine’s ‘Pony’ with). I’m always up for a wine, Negronis are also my thing. And so when she posted about this little recipe her husband created- so full credit to him – I knew that I would like that too.
Recipe: Prawn ceviche
- 500 grams of cooked prawns
- 1 can of black beans
- 3 cucumbers
- 1 punnet of cherry tomatoes
- 1/2 red onion
- 2 avocados
- 1 bunch of coriander
- 2 limes
- 1 tsp chili flakes
- salt
- corn chips
Dice everything into similar sized pieces. Toss with lime juice, chili flakes and lightly season with salt. Remember that the corn chips are salty, so don’t be too heavy handed. Wash down with a nice glass of white. It’s a Friday special in our household of late (hold the coriander for my husband).
