Life: What’s in my kitchen

Baby, it’s cold outside! We had such a good run with the weather, it seemed like we had summer forever which made the cold snap even colder. I was sleeping on top of the bedding with the fan on the week that my fourth son arrived. And then a couple of weeks later, I was changing the bedding over to flannelette sheets and our winter doona.

So with the winter weather brings, winter warmer dinners and lots of baked treats – as I use my oven to warm the house (frugal living/environmentally friendly living). Everyone is hungry – including me – so we seem to be powering through the baked treats, dinners and desserts (oh and our fruit box from Marley Spoon).

Oh and trips to the snow… I just ordered new snow gear for our eldest. The two older boys can’t wait to hit the slopes this season. I don’t know whether or not we will rent skis for our second youngest to have a little play or stick to the tube and building snowmen.

In my June kitchen…

I’ve got tray bakes or sheet pan dinners. They are especially great for warming the house and allowing the cooker to multi-task (feed a newborn, help out with homework, prepare an after school snack or two or fifty, read a book to a moody toddler, whip through some washing up, hang out that extra load of washing on the indoor dryer – because we avoid using the dryer, get through a quick blog post or scroll through instagram), oh and there is limited washing up at the end!

I’ll be sharing the recipe for this Mexican tray bake this month. There is soup! We love soup – hence our business in Bondi (Mr Perkins). One of my favourite winter soups is pea and ham soup. I save the ham bone from our Christmas dinner and whip it up as soon as the weather gets cold. Tell me I am not the only person who is still doing this like my Mum and my Nana.

I picked up some of the Master Origin coffee pods from Nespresso. Did you know that the capsules are recyclable? Nespresso coffee capsules are made from aluminium – the best material to protect the freshness and quality of the Grands Crus, which has the additional benefit of being infinitely recyclable. 

Nespresso has been investing in its dedicated recycling scheme for more than 25 years. And are committed to making it as simple and convenient for their customers to recycle their Nespresso capsules.

We are having seriously good meat. If you live near Rockdale, I would highly recommend it! Their schnitzels are amazing and they have the best service around.

I’ve got a copy of Bec Lloyd’s ‘The Flawsome Family Mealbook’. I met up with Bec the other day at Son of a Baker, and I was lucky enough for her to gift me a copy. In which she explains how you can change your meals mindset and start enjoying mealtime with your flawsome tribe.

I’m so lucky to love cooking for my family, and we currently don’t have any fussy eaters (touch wood). But I know that this always isn’t the case – so if this is you, I highly recommend checking out the book and Bec on Instagram.

Family meals for my tribe of 6
Where does all the fruit go? I feel like we defin Where does all the fruit go?

I feel like we definitely up the amount of fruit that we eat during the holidays cause everyone seems to be always snacking...

And well, when you’re at school, you’ve got what you’re sent with - and there is really only that crazy period between 3:15 and 5:30pm when they ask for snacks until dinner.

I mean, at least this is what they are eating...
Chicken tray bake - also known as chicken amatrici Chicken tray bake - also known as chicken amatriciana...

Start by browning off some chicken thighs ( I bought these ones from @delishdeliveries with the skin on and the bone in). 

Sauté with 2 brown onions and a head of garlic. Season and then add cherry tomatoes, passata and thyme. Transfer to a 180 degree oven for 45 minutes. 

I served mine with a mash of potatoes, spinach and more garlic 🧄 No vampires here 😝

I popped this @drinklisto Tommy’s Margarita Mix in my @delishdeliveries order as a little Christmas present to me. 

Think I’ll order another cause they went down way too easy!
This prawn plonk was was super easy after a day in This prawn plonk was was super easy after a day in the sun - and the simple combination of mayo and @joshandsue rose harissa was the perfect ‘sauce’!

The salad was cos lettuce, avocado, cucumber, and dill dressed in lime juice, olive oil and salt.
