Recipe: the entertainer’s white bean dip

The weather is warming up and I love making ‘nibbles’ for when friends drop around. You don’t have to make things difficult for yourself – stick to simple things that you can keep in your cupboard/fridge. But you definitely need to try this ‘entertainer’s’ white been dip, as it is so delicious and simple.

Now it uses the simple recipe for white bean puree that I blogged about earlier {here}…and you can have a little extra prepared, but it seriously takes like 5 seconds to make. And then you add in a few fridge ingredients and instant deliciousness!

ENTERTAINER’S WHITE BEAN DIP
1 can of cannellini beans
1 tablespoon of olive oil
1 lemon
1 teaspoon of tahini paste
2 tablespoons of sundried tomatoes (plus a little of the oil)*
salt and pepper
Blitz the cannellini beans, oil and lemon juice until smooth. Stir through the tahini paste and then top with the sundried tomatoes and a little of their oil. Season with a little salt and pepper and then serve.

* I like to add a little oil from the sundried tomatoes to add in some extra flavour – as the oil has normally been infused with garlic and some herbs, not to mention the sundried tomato goodness!

However, I still seem to feel that mum guilt. I mean, I think I need to do a little more than just follow @drsophiebrock (@smallbusinessgrowthclub has so many good things to say about Sophie)… am I doing enough? Are they happy? Am I creating good memories for them? Am I giving them good life skills and coping tactics? Am I creating enough one on one time with each of them?

I know I’m a people pleaser, a perfectionist (and some … scrap that… most people I know say I am also an over achiever). How do I flip my thinking to focus more on the positive and not be so critical of myself? As I don’t want to pass on this trait to my kids.

Again @delishdeliveries did the majority of the work in preparing the Bulgogi beef.

Boil the rice. Stir fry the beef. Toss some gem lettuce with black sesame seeds and sushi seasoning. Top it all off with kimchi.
