Recipe: Whole Green Olive Salad

So it appears that I have an olive craving. It’s funny as my Mum had an olive craving when she was pregnant with me. I’ve been thinking that this baby is a boy – the thought of having a girl hasn’t actually crossed my mind, until just now. 

It’s funny, since I was a kid, I always thought of myself as a mother of boys. A mother of four, beautiful, healthy, robust BOYS. Call me crazy {because I just might turn into a crazy lady with that fate}, but that’s what I picked my future as, when I was growing up.

People are constantly asking me if I am hoping that this baby will be a girl. And in all honest, I just want this baby to be healthy. This baby is a blessing from God and this baby is who it is from the moment it was conceived – I am certainly unable to change fate.

You might think it’s a little strange to add extra garlic to the aioli dressing, but I am also struggling to get over a cold/soar throat during the middle of this pregnancy – so extra garlic it is. I wonder if it is a mix of stress, moving and the pregnancy that has me in this current predicament?

Sandhurst whole Sicilian olives

WHOLE GREEN OLIVE SALAD

170 gram jar of artichoke hearts
1 tomato
1 garlic clove
1 baby cos lettuce
45 grams of green olives
50 grams of aioli
2 tbsps warm water
salt and pepper

Drain and quarter the marinated artichokes and coarsely chop the tomato. Finely chop the garlic. Thinly slice the cos lettuce and squash the olives with the blade of a knife to release the stones before discarding the stones and chopping roughly.

Combine the aioli, garlic and warm water in a bowl. Whisk until creamy and then season with salt and pepper.

Combine the artichokes, tomato, olives, cos and dressing in a bowl and toss to coat.

    Love this salad, we are big artichoke and olive fans and always looking for new salad recipes for dinner. Funny, I always thought I would be the mother of 2 boys, I was sure of it but fate gave me a boy then a girl. Totally agree, doesn’t matter, our ability to make and create is so amazing and healthy, chubby cheeked babies is all that matters.

      Salads can get boring, so we too like to be ever creating new ones…and this is certainly a winner. In terms of our newborn, I’m happy to get what ever God intended me to have 🙂
