Recipe: Lady grey poached apples and currants

I’m a sucker for a warming bowl of porridge when the weather starts to get cold. And one of my favourite things to top a simple bowl of porridge is poached fruit.

These poached apples and currants are perfumed with lady gray tea – so if you’re short on time or you just don’t ever seem to finish a hot cup of tea, then this might be right up your alley.

I also topped by breakfast bowl with a crumble of Franjos kitchen breast feeding friendly biscuits – I mean, can a breast feeding Mama ever consume too many oats?

If you are also a porridge or ‘oatmeal’ fan, you might enjoy some of my favourite porridge recipes; porridge with salted pears and pistachio sesame sprinkle, almond milk and sour cherries porridge and porridge with almond milk and vanilla.

Recipe: Lady grey poached apples and currants

  • 4 apples
  • 1 cup of water
  • 1 lady gray tea bag
  • 1/4 cup of currants
  • 1 tbsp of maple syrup
  • 1 tsp of cinnamon

Place all the ingredients in saucepan and bring to a simmer. Cook for 20 minutes or until the apples are tender. Allow the apples to cool before transferring to an air tight container and popping in the fridge. The apples should keep for 3-4 days (but I think you’ll eat them quicker then that).
