Do you ever get random meal planning inspiration when you see an item? For me, it was the sambal oelek in a recent online purchase from Delish Deliveries. It made me think of travelling to Malaysia for a friend’s wedding in 2011 and I decided that I would give it a go.
If I can’t travel to Malaysia, then why not bring Malaysia to my dining room table? In saying that, I think we are reaching the sweet spot with the kids to be able to start doing some serious travel again. What’s on your bucket list?
Recipe: Prawn Nasi Goreng
- 1 shallot, chopped
- 1 thumb size piece of ginger
- 1 bulb of garlic
- 2 birdeye chillies
- 1 lemon grass stalk, sliced
- 1 tsp shrimp paste
- 1 tbs cashew nuts
- 1/2tsp pepper
- 1tbs brown sugar
- 1kg chilled cooked rice
- 24 large prawns
- 2 shallots sliced
- 2 garlic cloves, sliced
- 4 spring onions
- 1/2 cup ketchap manis
- garnish
- 6 fried eggs
- baby cucumber
- coriander
- sambal oelek
Combine all the paste ingredients in a mortar & pestle or blender. Process until the mixture is worked into a paste.
Heat a wok until it begins to smoke add a drizzle of oil and the rice, fry off the rice until the grains a separate. Add the onion, garlic and nasi paste. Fry for a couple of minutes. Add the prawns, and spring half of the onion, cook until the prawns change colour. Add the ketchup manis, stir through.
Serve the rice and prawns. Top each with a fried egg and garnish with the cucumber, spring onions, and sambal oelek.
