Green is my favourite colour. When I was four, I was dancing in the rain and slipped over. I ended up staying the night in hospital and they asked me what my favourite colour was and I said green. And I vividly remember them bring me a tray of food where everything was green.
I covered the fish in a seasoned flour and then slightly fried before topping with all things green – the stand out being the salsa verde! Literally translating into ‘green sauce’. I was super excited to find it at the local Woolworths to make this a quick and easy midweek meal.
Recipe: Fish Tacos
- 1kg flathead
- 1/4 cup of plain flour
- 2 tsp. chili powder
- 1 tsp. paprika
- 1/2 tsp. ground cumin
- 1/2 tsp. cayenne pepper
- 1/2 tbsp. vegetable oil
- salt
- Freshly ground black pepper
- 20 corn tortillas
- 1 cup of salsa verde
- 3 avocadoes, diced
- 1/4 cabbage, shredded
- 1 bunch of raddishes
- 1 bunch of chives
- Lime wedges, for serving
- Sour cream, for serving
Toss together the plain flour, chili powder, paprika, cumin, cayenne and a little salt and pepper. Lightly dust your flathead before browning off in vegetable oil.
Prep your sides and take to the table to serve family style.
