There is too much washing up in this house. Six bowls, six plates, six spoons, six knives and forks, 1 billion cups and my dishwasher is full. I feel like there is even more washing up during the school holidays as instead of four lunchboxes a day, I am serving 1 million snacks.
And so, I go back to basics… One pot wonders (which has now actually turned into two one pot wonders to be able to fill my ever hungry children). So please note that the quantities below fed by family of six and actually was two trays worth.
Recipe: Honey roasted chicken
- 2kgs chicken dummets
- 2 red onions
- 1kg potatoes
- 1 bunch of oregano
- 2 mandarins
- 160g of mixed cherry tomatoes
- 2 tbsp honey
- 4 cloves of garlic
- 20g fetta cheese
- olive oil
- salt and pepper
Preheat the oven to 180 degrees.
Layer potatoes, onions, oregano, tomatoes, and chicken. Squeeze over the juice of the mandarins, honey, crushed garlic, olive oil and salt and pepper. Toss and roast for 45 minutes.
Remove from the oven and crumble the fetta over the top before serving.
