Who doesn’t love a good fake away? I mean, we are all trying to make our dollar stretch a little further these days. I’ve seen a lot of food bloggers start sharing their budget friendly meals (or even ‘funnier’ – share items that they have picked up for $10 to show that those $10 meals just don’t exist anymore).
This fakeaway might not cost you $10 but it sure will be cheaper that ordering a takeaway or visiting a resturaunt.
Recipe: Vietnamese chicken bowl
- 1 packet of rice noodles
- 500g of chicken thighs
- 1 jar of Marion’s Kitchen’s Vietnamese Style Lemongrass and Garlic
- 4 carrots
- 4 cucumbers
- 1/2 an iceburg lettuce
- 1 green papaya
- 1 bunch of Thai basil
- 1 bunch of Vietnamese Mint
- 6 cloves garlic
- 6 small bird’s eye chilles
- 1 long red chilli
- 4 tbsp white sugar or palm sugar
- 3 tbsp fish sauce
- juice of 2 limes
- 1 packet of spring rolls
Start by popping the spring rolls in the oven (follow the directions on the packet) and then by work on your nahm jim sauce. Use a mortar and pestle to pound the garlic and chillies to a rough paste. Then, using the pestle, stir in the sugar, fish sauce and lime juice. Transfer to a serving bowl.
Next pour 1/2 of the jar of Marion’s Kitchen’s Vietnamese Style Lemongrass and Garlic over the chicken thighs and BBQ until cooked through. (I give this job to my husband, so that I can crack on with prepping the rest of the ingredients).
Pour boiling water over your rice noodles and set aside. Shred the lettuce. Grate the carrots and green papaya. And prepare the cucumbers into whatever shapes your family will consume.
To assemble your bowl, drain the noodles and place at the bottom. Top with lettuce, carrots, papaya, cucumber, and chicken thighs. Top with nahm jim sauce, herbs and your spring rolls. The best part is that you can place all the ingredients on the table and serve the meal ‘family style’ – meaning that the children can create their own bowls and take as much or as little of any ingredient.
