Recipe: Baked Salmon with hommus and snowpeas

This is a golden oldie – it’s actually one of the very first recipes I ever blogged … and you know what since 2008 it has only ever had 6 views {well on my old Blogger site}. I couldn’t believe it – this is a great dish. It is simple, it is quick and it is easy! And yet, when I moved from Blogger to WordPress it could have been lost to the world.

So here it is again – I hope that you enjoy it as much as our family does.

If I was Jamie Oliver I might even claim that this is a 15 minute meal – but it’s really 15 minutes of cooking time, with about 5-10 minutes of preparation. So whip up this light dinner for you and your loved ones – oh and the omega 3 in the salmon is not only good for me … but growing baby/toddler/husband’s brains…

GoodFoodWeek's baked salmon with hommus and snowpeas

BAKED SALMON WITH HUMMUS AND SNOW PEAS
2 salmon steaks
4 tablespoons of honey
3 tablespoons of soy sauce
2 tablespoons of lime juice
1 teaspoon crushed garlic
1 teaspoon crushed ginger
2 shallots
200g crushed macadamia nuts
1 bunch baby carrots
6 tablespoons of hummus
150 grams of snow peas

Mix together in a bowl 2 tablespoons of honey, soy sauce, lime juice, garlic, ginger and the shallots (finely shredded).

Line the bottom of a baking dish with the carrots and drizzle the remaining honey over the top. Place the two salmon steaks on top. Spoon the marinade over the top and then finish with the crushed macadamia nuts.

Bake in a 200 degree oven for 15 minutes. Serve with hummus and snow peas.

    I make salmon all the time so am always on the look out for different ways to make it – this is great and I love hummus too. x

      I think if I served hommus {or avocado} on the side of any meal, it would go down tremendously with my family 🙂

Family meals for my tribe of 6
Hi guys 👋🏻 I seem to have had a few new foll Hi guys 👋🏻 I seem to have had a few new followers of late. I wonder if you’re here because of my reels?? (And if so, you’ll probably also want to follow @smallbusinessgrowthclub )

If you are new… here is a little intro… I’m Shari - a mum of four small boys (although their little hands seem to be getting better and bigger). They are nine, seven, five and three.

I whip up quick and easy meals for my family. I currently work full time and so the content juggle is real 😩

But the thing is, I actually also have a blog - www.GoodFoodWeek.com.au - so you can drop by there for some of my tried and tested favourites. I’m fact, this Spanish beef is one of the most viewed recipes on the blog!
